A beautifully coloured and aromatic vegan beetroot and coconut curry from Riverford (just omit the yoghurt or replace with a non-dairy alternative). This is a simple dish made with beetroot, coconut, lime and a selection of carefully chosen spices. It's rich, warming and full of flavour.
The ingredients list is relatively short and simple relying on a number or store cupboard essentials. It can be served with any choice of grain from rice to quinoa along with a spoonful of lime pickle.
