When you reach dessert you can be a bit more experimental with both the flavours and intensity of your beer. It's the perfect opportunity to unleash that big, hoppy Double IPA and sit it next to a slice of carrot cake. The decadent chocolate notes in an Imperial Stout pair superbly with a strawberry cheesecake. Imagine dipping strawberries in a chocolate fondue and you can see why this would work.
For something more unusual Brooklyn Brewery's Brewmaster Garrett Oliver suggests serving a rich chocolate ice cream with three different fruit beers; apricot, raspberry and peach.
