Apple pies are an easy way to use up an abundance of these autumnal fruits. The addition of juicy red gooseberries with a gentle tartness have the same impact as adding lemon juice to your apples.
To make this dessert grease a pie dish with coconut oil or vegan spread. Line the dish with Jus-Rol ready-rolled shortcrust pastry. Gently cook sliced apples and red gooseberries in a pan until just starting to soften. Add to the dish and place a layer of pastry over the top. Glaze with soya milk and a sprinkling of brown sugar.
Bake in the over at 180 degrees for approximately 30 minutes until the pie is cooked and the pastry is gold brown.
