Chickpeas are synonymous with veganism; whether the key ingredient in hummus or the new wonder liquid, aquafaba, used for making vegan meringues.
Crispy roasted chickpeas are a revelation. Simple to make and packed full of protein.
Take a can of chickpeas and rinse them thoroughly under cold running water. Ensure the chickpeas are as dry as possible before placing on a baking tray with copious amounts of olive oil and a little salt. Roast in the oven for 20-30 minutes and then add your chosen herbs or spices. Enjoy while hot to ensure they stay crispy!
Chickpeas are characteristically nutty and earthy in flavour, and once roasted they also become quite dry. The beer pairing needs to balance out this dryness and the earthy notes.
Wheat Beers would be an obvious choice with subtle spices mirroring those added to the chickpeas, citrus notes bringing balance to the earthy notes and strong carbonation lifting everything from the tongue.
Wild Beer Co Sleeping Lemons is a traditional German-style sour wheat beer known as a Gose. Usually be brewed with coriander and salt, Sleeping Lemons is instead made with preserved lemons. The citrus sharpness and lip-smacking saltiness work wonderfully well with the spicy roasted chickpeas.
