Bute Island Food's Blue-style is a delicious, dairy-free alternative to piquant blue cheeses such as Stilton. Much of the Sheese range is available re-branded in supermarket free-from aisles, but Blue-style can be found in the chiller cabinets of most independent health food stores.
Blue-style may be missing the distinctive blue veins of its dairy counterpart, but the smell and taste is remarkable: strong, sharp and pungent.
It can easily be used in recipes as a substitute for dairy-based blue cheeses. However, it's equally as perfect eaten by the slab at the end of the evening paired with a sticky DIPA.
Contrast the sharp, tangy flavours of this blue-style vegan cheese with a rich and roasty Imperial Stout. These beers, full of raisins, dates, oak and vanilla, contrast the flavours in the cheese.
The classic, harmonious pairing is with a strong Barleywine, like Anchor Brewing'sĀ Old Foghorn Barleywine Style Ale. It's a style that offers toffee sweetness and fruity hops to balance the strong flavours of the cheese.
For something different, pair with a thick and syrupy Double IPA. Those with marmalade-like citrus flavours and notes of golden syrup act like a rich chutney to accompany the cheese.
